Be sure to let the freshly brewed coffee cool before incorporating it into the ingredients because hot coffee will start the cooking process before you are ready for it.

Ingredients:

For the Streusel Topping:

  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 4 tablespoons unsalted butter, cold and cut into small cubes

For the Cake Batter:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup freshly brewed strong coffee, cooled

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round or square baking pan. Prepare the Streusel Topping:
  2. Combine the flour, granulated sugar, and cinnamon for the streusel topping in a bowl. Add the cold butter cubes and use a fork or your fingers to blend until the mixture resembles coarse crumbs. Set aside.
  3. Make the Cake Batter:
    Whisk together the flour, baking powder, baking soda, and salt in a medium bowl. Set aside.
  4. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  5. Beat in the eggs, one at a time, then add the vanilla extract. Mix well after each addition.
  6. Gradually add the dry flour mixture to the wet ingredients, alternating with the sour cream and freshly brewed coffee. Begin and end with the dry ingredients, mixing until just combined after each addition.

Assemble and Bake:

  1. Pour half the batter into the prepared baking pan and spread it evenly.
  2. Sprinkle half of the streusel topping over the batter.
  3. Carefully spread the remaining batter over the streusel layer.
  4. Sprinkle the rest of the streusel topping over the top.
  5. Bake at 350°F (175°C) in the preheated oven for 35-40 minutes or until a toothpick inserted into the center of the cake comes out clean.
  6. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  7. Once completely cooled, slice and serve the coffee cake. Enjoy the cake with a cup of freshly brewed coffee!
